I'm competing with hundreds of other hot dog stands. It'd be next to impossible to stand out unless I had a reputation of having the best hot dogs in the city. If I put that same stand up in an area where people haven't eaten in a week, I wouldn't need to say anything. They would be throwing money at me just to get a bite.
