[Image item] OMGoodness, everyone, we tested this recipe until it was perfect, and we're so excited to share these Air Fryer Pumpkin Chocolate Chip cookies with you!
Â
They make a small batch (16 to 20 small cookies depending on how you scoop the dough).Â
Â
I do give instructions on how to make them in the oven, but when you cook them in the air fryer they get this amazing crispness on the outside while still being completely tender, soft, and cakey on the inside.
Â
Plus, the dough freezes well, so you can cook just a couple at a time.
Â
If you try it, please comment on the post and let us know what you think! First of all, you can pressure cook your own [homemade pumpkin puree](%2F%2Fwww.pressurecookingtoday.com%2Finstant-pot-pumpkin%2F/1/0100019262ddd243-aa1d4c37-4504-469d-bb5b-9479713cbbc5-000000/SiEoaB3DJtp3uXRzBTI1_QeECBM=394) or use a can of Libby's pure pumpkin.Â
Â
Our not-so-spicy [Pumpkin Chorizo Soup](%2F%2Fwww.pressurecookingtoday.com%2Fcreamy-pumpkin-soup-with-black-beans%2F/1/0100019262ddd243-aa1d4c37-4504-469d-bb5b-9479713cbbc5-000000/IS4_dEmDG4y_4m3oBuQME-n9hWs=394) is a delicious combination of chicken sausage, black beans, and Tex-Mex spices. The pumpkin puree makes the soup creamy and delicious without adding much cream. And the longer it sits, the more the flavors meld and become delicious.Â
Â
My favorite fall breakfast is our [Pumpkin Steel Cut Oats](%2F%2Fwww.pressurecookingtoday.com%2Fpressure-cooker-pumpkin-steel-cut-oats-with-pecan-pie-granola%2F/1/0100019262ddd243-aa1d4c37-4504-469d-bb5b-9479713cbbc5-000000/eDoknMG0psjQQdp9ydUI2HPZ7YM=394) with Pecan Pie granola. They're good separate, but together you get the flavors of TWO Thanksgiving desserts, but much healthier for you.
Â
And, of course, I have to share our recipe for [Classic Pumpkin Pie](%2F%2Fwww.pressurecookingtoday.com%2Fpressure-cooker-pumpkin-pie%2F/1/0100019262ddd243-aa1d4c37-4504-469d-bb5b-9479713cbbc5-000000/bdPfdRbe6kBEyRMR24dtu3DufpU=394). It cooks up cute and little in a 7-inch springform pan. Links not working? Copy and paste the URL into your browser:Â

We got out the Halloween decorations this weekend, and Luna was a good sport about letting us play dress-up with some of her old costumes.Â
Â
She also enjoyed being outside with us in the unseasonably warm fall weather while we worked on our spider web. [As always, thank you for you supporting us at Pressure Cooking Today! Have a wonderful week!Jenn + Barbara]  5526 West 13400 South #524
