[A tight photo of a white ramekin filled with cooked grains of plain barley, topped with a little chopped fresh parsley.] Kung pao chicken loaded with veggies and has a rich, savory flavor, with a bit of sweet and spice that make it a favorite on the takeout menu. I've written the recipe pot-in-pot style, so you can cook the rice at the same time and get dinner on the table in a flash.  [If you try it, please comment on the post to let us know what you think!](%2F%2Fwww.pressurecookingtoday.com%2Fpressure-cooker-carrot-cake-oatmeal%2F/1/0100018f6caff664-7403c547-e018-4e1b-97ef-08f8e4727410-000000/Alkc2ui_YoFJvJ98r4OocC0JyOg=373) [Get the Recipe](%2F%2Fwww.pressurecookingtoday.com%2Fkung-pao-chicken-instant-pot-recipe%2F/1/0100018f6caff664-7403c547-e018-4e1b-97ef-08f8e4727410-000000/F8qL4fwJNQNbCS166bhN8w2jP_E=373) If needed, you can copy and paste this link into your browser: [A light gray rectangle with a diamond shaped photo on the right and text on the left that reads ] Something for summer? It recently snowed in Utah and dipped below freezing, and I am getting SO impatient to see summer around the corner. Here are some of the summer foods I've been daydreaming about: - [Make-Ahead Baby Back Ribs](%2F%2Fwww.pressurecookingtoday.com%2Fmake-ahead-bbq-baby-back-ribs-perfect-for-tailgating-parties%2F/1/0100018f6caff664-7403c547-e018-4e1b-97ef-08f8e4727410-000000/-1FNQVF6Kye8VPmD6mB_WSrQmz4=373) are my favorite for when I'm hosting a get-together. I pressure cook the ribs in advance and have them ready to go so all I have to do is finish them on the grill when we are ready.  - This [Potato Salad](%2F%2Fwww.pressurecookingtoday.com%2Fquick-potato-salad-in-the-pressure-cooker%2F/1/0100018f6caff664-7403c547-e018-4e1b-97ef-08f8e4727410-000000/ip__49qjSFR-GpPpblcjRlC4OFg=373) is so easy—hard-boil the eggs and cook the potatoes at the same time, then chill and dress!  - [Kalua Pork](%2F%2Fwww.pressurecookingtoday.com%2Fpressure-cooker-kalua-pork%2F/1/0100018f6caff664-7403c547-e018-4e1b-97ef-08f8e4727410-000000/NtTMC5YtdBg_r0DFPWWpkt9Eu8M=373) is super fall-apart tender and full of island flavor. It takes a 16 hour cook time and gets it on the table in under 2 hours. Links not working? Only one eye is visible.] Pupdate 🐾 Last night was a *lovely* evening, so we took a walk to the park. All the kids were up on this rubber “plank” suspended about 3 feet above the ground, and Luna kept trying to get to where the kids were. We put her up there and were very surprised that she thrived.  She didn't ask to get down, didn't cower, just confidently walked the cat walk!
