On one of my first dates with my husband we, two Italians, decided to make pasta together with homemade meatballs and sauce. After spending the whole evening preparing, and me being heavy handed in the garlic department, we sat down to dine, and after the first bite, my husband’s face twisted and he unwittingly declared how funny it was that we made such terrible sauce! I was in shock. It tasted perfect to me. Great, even. Why did he think it was terrible? “Too much garlic!” he told me. I chuckled and pretended to agree, with pride that I clearly have a higher percentage of Italian in me. Deep down I knew there was exactly enough garlic. You don’t measure garlic with anything but your heart! Am I right? I mean, where would the culinary world be without garlic? These precious bulbs complement cuisines all over the world. To be honest, I use quite a bit of it, it’s one ingredient I always have on hand, and only the real stuff, nothing pickled in a grocery store jar for me! In fact, I use enough of it that I started taking out loans to buy it! Okay, that’s not true. But I did decide long ago that I should grow my own garlic, given how much of it I use in my cooking. The nice thing about garlic is that it’s not hard to grow. If there is a set-it-and-forget-it vegetable, it’s garlic. What variety of garlic should I grow? There are hardneck and softneck types, and then within that, there are dozens of varieties to choose from – and that’s just what’s readily available! And as you might imagine, they can range pretty widely in flavor and preferred growing conditions. Still, I was happy to try a few varieties and see what happened. The more I thought about it, though, the more I realized I still needed to know a few things about growing garlic: How much water does it need? When will I know it’s ready to harvest? How do I cure it? When do I snip off those delicious garlic scapes? Plus, there were a few things I was curious about: What are the health benefits of garlic? What, exactly, is allicin?
