Potato Plant Profiles Potatoes and sweet potatoes mature in as little as 60 days or as much as 135 days, depending on the variety. They’re loosely divided into early potatoes, mid-season potatoes, and late potatoes, although if you want to have some fun, you could sort them by color, too! You’re likely familiar with red potatoes, yellow potatoes, and those with a light russet skin, but potatoes may also be purple, pink, beet-red, purple, purple splashed with pink, white, and blue.
