Because onions are easy to grow, it’s easy to grow far too many of them. One day you’re caramelizing that first sweet Yellow Granex Onion that came up, and the next you’ve got onions as far as the eye can see. So you just pull them up and toss them in a bin in your basement, right? Not quite. Many varieties of onions do quite well in storage, but you’ll need to get them ready. Don’t worry. It’s not hard. Gently clean the bulbs and cure them by spreading them out on a clean, dry surface in a well-ventilated space. Give them two or three weeks to dry completely.
