Unfortunately in recent years, finding these types of wines has become more and more difficult. Fruit prices in Napa have soared to stratospheric heights. Even the once dependable, inexpensive Cabernet from Paso Robles now sells for much more than most daily budgets allow. And so as we search further afield for top-notch Cabernet, Washington is on our radar more and more frequently. With this beast of a wine from Foundation Cellars, we're not only focusing on Washington Cabernet in general, but much more specifically on the Red Mountain AVA. This tiny, ultra-premium, sub-region well-known for powerful, age-worthy Cabernet is a west-facing hillside parcellated into some of the most renowned sites in the country for Cabernet. The 2016 Foundation Cellars MMXVI comes from two prolific sites on Red Mountain—Shaw Vineyard and Quintessence Vineyard. Shaw is a super-rocky site with a 30-degree slope and west-southwest exposure that produces dense, structured wines. Quintessence Vineyard sits at a 1,000-foot elevation and faces due south. The younger vines here (planted in 2010) give explosive aromatics and exuberate fruit to the blend. The resulting wine is a full-bodied, dark-fruited, powerful Cab that will knock your socks off for the price.
