It's been perfected over the course of the year, and over 100 recipe tests later, we think we nailed it. Molly Marzalek-Kelly, lead developer behind our Ultimate Sandwich Bagels, landed on a smaller handheld size ideal for sandwiches, the [classic everything seasoning](, the right balance between chewy and crispy, and a genius cheesy egg packet that's a breakfast sandwich's dream come true. But going from a great bagel to an ultimate, Recipe of the Year-worthy title was no easy feat. [lifestyle1]( [lifestyle2]( In those many rounds of testing, Molly tinkered with every aspect of the bagel from sizing to shaping to timing the water bath — with a few failed batches of "wrinkly, sad looking bagels" to prove it, as she puts it. Looking back on the development days, Molly recalls the bagel's big existential questions: what sets it apart from other bagel recipes? "It felt like we were dancing around a strong bagel for a while, but we didn't know how to present it," she says. An easy, cheesy egg filling that can be made in the oven in just minutes solidified our stance on this being the ideal bagel for sandwiches. Once this folded egg packet joined the party, things started to fall into place. "The cheese-filled eggs ended up cooking beautifully in a [9 " x 13" pan]( at the same temperature as the bagels," Molly says, which rounded out the recipe for not just bagels, but full-on sandwiches for any time of day.
