I was eager to learn more about the origins of this beloved bake, so we commissioned food anthropologist and writer [Debra Freeman]( to write [an essay tracing the history of biscuits in America](. It's a smart read that illuminates, among other things, the important and significant legacies of Black bakers in this country. By the essay's end, I was convinced that the phrase "as American as apple pie" should be changed to "as American as biscuits." Deb's essay fed my mind, but it also made me really crave biscuits. Happily, my King Arthur Test Kitchen colleagues were cranking out an impressive number and variety of biscuits in order to pick our favorites for this [wonderful collection of recipes](. There are biscuits made with [all-purpose](, [self-rising](, and [cake]( flours; [buttermilk biscuits](, [flaky biscuits](, [sourdough biscuits](, and [drop biscuits](. A biscuit for every baker! But still, we wanted more. So we asked a few of our favorite bakers to develop some new recipes for us. The results: Jordan Smith's verdant [Green Goddess Herb Biscuits](, inspired by the iconic salad dressing; [Coffee Cake Biscuits](, topped with irresistible streusel, created by Baltimore-based baker Amanda Mack; and Cheryl Day’s [Scallion and Cheddar Cathead Biscuits](, so named because the oversized biscuits are as large as a cat’s head.
