Martin fills his puffs with an easy lime-spiked whipped cream, and swirls in a quick hibiscus syrup for a sweet-tart pop of color. Then — the best part, in my opinion — Martin makes a fast craquelin (a thin cookie, essentially) and drapes it over each puff, where it bakes into a sugary crown. This is a classic move, and for good reason: it adds a little sweetness and a lot of crunch, two things that beautifully offset the cream in cream puffs. Speaking of that cream: you have options.
