Rosh Hashanah baking starts NOW!

It's not all apples and honey. Needless to say, it was unsettling. No friends, no furniture, no bustling synagogue, and no festive meal around a crowded table. But one day I got home from work to find that our neighbors had dropped off a [honey cake](. And even though I had surely tasted many baked goods at work that day, there was something extra delicious about it. Even without an accompanying note, I knew through shared, silent language that it was meant as well wishes for the Jewish new year (and a welcome to the neighborhood). [Over on the King Arthur blog](, writer Lara Rabinovitch asked bakers representing a wide span of Jewish tradition what Rosh Hashanah smells and tastes like to them, and it's not all apples and honey, as ubiquitous (and beloved) as that combination may be. It's [challah enriched with pumpkin]( (pictured above) for a golden color and soft texture. The recipes take inspiration from all parts of the world, from Ukraine to Iran to Morocco to Brooklyn.
