When cooked with coconut milk, it develops a creamy texture and is perfect for meal prep. 35 minutes INGREDIENTS - 4.25 oz boneless chicken breast - 7 oz cauliflower - 2.67 oz peas (fresh or frozen) - ½ of one green bell pepper - ½ of one onion - 0.67 cups low-fat coconut milk - ½ tsp coconut oil - Optional: ground paprika, unrefined salt, black pepper DIRECTIONS - Grate cauliflower, dice pepper and onion. - Cut chicken breast into 1 cm (1/2 inch) thick strips and season with salt and pepper to taste. - Heat coconut oil in a pan. Stir-fry chicken strips on medium heat for approx. 5 minutes. - Add cauliflower, peas, onion, and pepper and stir-fry on medium heat for another 5 minutes until everything gains a golden brown color. Season with paprika, salt, and pepper to taste. - Add coconut milk and let cook on medium heat for approx. 15 minutes, or until the liquids have evaporated. Stir occasionally.
