NUTRITION NUGGETS Some consider cauliflower, along with its cousins broccoli, cabbage, and kale, to be a superfood because itâs both low-calorie and rich in vitamins, minerals, and antioxidants â including 58% of your daily Vitamin C needs. At 92% water, white cauliflower (also found in green, purple, and orange varieties) helps with hydration and digestive health thanks to its high fiber content. Additionally, itâs a great source of the vital nutrient choline, which aids in brain development and has been shown to prevent neurological and liver disorders, as well as the antioxidant sulforaphane, which has been shown to reduce blood pressure and possibly help prevent diabetes.
