The perfect dish for summer! 30 minutes INGREDIENTS - 3.5 oz red lentils - 0.5 bulbs of fennel - 1.75 oz low-fat feta cheese - 0.5 lemons (zest and juice) - 0.5 chopped onions - 1 clove garlic - 1 cup water - Optional: black pepper DIRECTIONS - Dice onion and garlic. - In a pot, bring water to a boil. Cook onion, garlic, and lentils for approx. 15 minutes on medium heat, or until water has evaporated. Stir occasionally. - Remove pot from stove then add lemon juice.
