Most people these days might recognize mustachioed, jovial, tatted-up giant Matty Matheson from his role on the Emmy award-winning FX series The Bear. But Matheson isn’t just some newfound celebrity chef—he’s a cook first and foremost, a serious restaurateur whose rise to stardom has been slow and steady over the past twenty-four years. Long before The Bear, Matheson cut his culinary teeth in Toronto, where he started cooking in French kitchens in the early 2000s. And because we know Matheson as a man of good taste, we hit him up for some of his favorite restaurants in the Windy City when he’s in town filming. Named for Greenwich Mean Time, the mechanical complication—which allows the wearer to track the time both at home and away—was born in the middle of the 20th century, when the uptick in air travel meant that folks were suddenly finding themselves in more time zones than they used to.
