We’ve all heard that adhering to a sleep schedule is an important part of our overall “sleep hygiene,” but establishing a regular sleep schedule is often easier said than done. But for iPhone users, the built-in Sleep feature on your phone can help make it easier. Open the Health app, tap Get Started under Set Up Sleep, then tap Next. Then you'll see a series of prompts to establish things like Sleep Goals (the number of hours you'd like to sleep each night), Bedtime and Wake Up times, and more. You can also enable a function called Sleep Screen, which will kick in at your specified bedtime to simplify your lock screen and turn on Sleep Focus. (Sleep Focus is similar to Do Not Disturb, and can limit notifications, app access, and more. Sleep Focus can be set up in Settings > Focus.) Once you’ve set up Sleep, you can always go back and adjust your sleep goals or schedule as needed. If there's a one-off change to your schedule where you need to wake up early for some reason, you can change your next Wake Up alarm inside the Clock app. [Learn more at Apple Support](. Android Users: To set up a sleep schedule, open the Clock app and tap Bedtime. Tap the time under Bedtime and adjust the time and days you want to follow that schedule. COOKING There’s A Better Way To Know If Chicken Is Cooked [A photo of Jillee using a meat thermometer on chicken.]( Cutting into chicken to check if it’s cooked through can have unfortunate consequences. The reason why so many recipes specify a time for letting meat "rest" after cooking is that it takes time for meat to reabsorb the moisture that moves toward the exterior as it cooks. If the moisture doesn't get reabsorbed, it is liable to spill out as soon as the meat is cut. But resting isn't just important for beef or pork—it's important for chicken too. And yet people commonly cut into their chicken to check whether it's done, allowing the moisture inside to spill out through the cut. Depending on how much moisture is lost, this could cause chicken to become unbearably dry, and no one wants that! Instead of cutting into chicken to see if it's done, use an instant-read digital thermometer to see whether it’s reached 165°F. Not only is this a more accurate indication of doneness, but you'll only make one tiny hole in the meat as opposed to a large, deep cut. JILLEE'S PICK The Third Time’s The Charm For The Great Gatsby [The front cover of ]( [The Great Gatsby by F. Scott Fitzgerald]( has been a fixture in American grade-school English classes for decades. And like many students, I found it difficult to engage with most books that I had to read for school, including The Great Gatsby. I gave it another try in 2013 after seeing the movie, but I still felt like I was missing something. The third time was the charm though, because I gave it another try recently and felt like I finally “got” what Fitzgerald intended with his portrayal of America in the [Roaring Twenties](. Set in New York after World War I, The Great Gatsby shows an America that has lost its moral compass, and where the wealthy elite live lavish, but ultimately hollow, lives. The narrator Nick Carraway serves as a comparatively "average" type as he describes living next door to the luxurious villa of the wealthy, enigmatic Jay Gatsby. Nick also gets involved with a cynical and bored social clique that includes his cousin Daisy Buchanan and her husband Tom. Fitzgerald's narrator describes the couple as “careless people, Tom and Daisy—they smashed up things and creatures and then retreated back into their money or their vast carelessness, or whatever it was that kept them together, and let other people clean up the mess they had made." This description is the story in microcosm—that glamorous facades often hide ugly truths. The writing is really extraordinary and emotive, but the story—with its extravagance, scandals, and corruption—is compelling and tragic in a way that validates the acclaim this book receives.
