Our goal was emerald-green broccoli and tender beef coated in a pleasantly salty, supersavory sauce. Beefy flank steak won out against other cuts that were harder to prepare; it also has flavor to spare. For the sauce, a delicious mix of common pantry staples mixed with a little ginger add up to greatness. A cool trick at the end of cooking keeps the broccoli beautifully green and crisp-tender.
