I loved âem whether they were thick and juicy or crisp and smashed or made with turkey, lamb, beans, or even shrimp. But as my family and friends have pointed out, itâs more accurate to say that I love all styles of burgers, as long as theyâre well-prepared. After all, I spent months chasing the perfect recipe for [Smashed Burgers]( with thin and lacy patties. The beef contracted as it cooked and didnât sit flush against the pan, so it didnât brown evenly. And browning was exactly what I needed. It wasnât until after I figured out that the key was to let the patties stick to the skillet that I could move on to developing a rich and tangy sauce for smearing across the buns. Toppings are the other key to a great burger. I change them up depending on my mood, but I never skip them. I love pickled avocado on [Skillet Turkey Burgers]( and [Black Bean Burgers](.
