Not to mention, there are new seasonal ingredients to cook with (apples, and cranberries, and pears—oh my!) and favorite recipes to dust off, particularly those heartier ones that are perfect for cold weather. And as the temperature drops, I’ll actually look forward to turning on the oven. One of the recipes I’ll definitely be heating up the oven for soon is our [No-Knead Rustic Loaf]( one of a whole chapter of no-knead bread recipes from our cookbook, [Everyday Bread](. In my opinion, no-knead bread is the best bang for your buck, giving close-to-bakery results with close-to-no-effort. No starter to tend to (or in my case, forget about) and no stand mixer to lug onto the counter. Just flour, water, salt, a little bit of yeast, a bit more time, and voilà —bread! (If you’re new to bread baking, no-knead bread is a great place to start. You’ll be holding a burnished, crackled boule and beaming with pride in no time.) And since I’m making bread, I’ll need something equally comforting to go with it, such as Mark Huxsoll’s [Caramelized Carrot Soup with Coriander Lemon Browned Butter]( (It had me at “caramelized,” but “browned butter” did me in). Or Amanda Luchtel’s [Braised Pork Marbella]( a winning reenvisioning of a classic. If I run out of bread to sop up the savory, sweet, and briny sauce, I’ll just lick my plate clean; it’s truly that good. For a less meaty, but no less hearty, meal, I’ve bookmarked Steve Dunn’s [Creamy Chickpea and Sweet Potato Stew]( rich with coconut milk and peanut butter, and fragrant with coriander, lime zest, and cilantro. (Maybe you should bookmark it too?) While I know chili can be controversial—beans or no beans? ground beef or chuck?—I have no beef with our [Simple Beef Chili with Kidney Beans](. It’s straightforward and comforting, perfect for piling on all the toppings—just what I’m looking for when I want to tuck into a bowl. So welcome, fall!
