Thereâs one off the Pacific coast highway in Malibu thatâs known to be a prime spot for celebrity sightings. Chef Nobu, as heâs known, is the force behind these restaurants. But had you met him at 17, you may not have guessed this story. He got expelled from high school for driving and crashing a car without a license. He went to work as an apprentice at a sushi restaurant in Tokyo. And his culinary talents were apparent; he got offered a job in Lima, Peru. But it was short-lived, and soon Nobu left to start another restaurant in Anchorage, Alaska. Then, only 50 days after opening, the restaurant caught fire and burned to the ground. He gave his dream one last shot and opened a small sushi bar in LA with a loan from a friend. And this time, it stuck. Quickly, his restaurant was attracting A-listers such as actor Robert De Niro, who offered to go into partnership with him. Today, Nobu is the owner of more than 40 sushi restaurants across the globe. It was at this LA spot that Nobu is credited with putting [Miso Black Cod]( on the map, drawing on a longstanding technique of preserving fish in sweet white misoâand making it endlessly popular and craveable decades after he first put it on the menu. Marinating in miso before cooking both seasons the fish and draws out moisture, firming it up to give it an elegant, meaty texture. The miso has a high amount of salt and sugar, so once you broil it, you get a caramelized exterior that looks worthy of a high-end restaurant. We made a recipe inspired by the one served at Nobu.
