(One of the many occupational hazards of testing equipment for a living.) Most home cooks can probably get by with just three: a chef’s knife, a paring knife, and a serrated (bread) knife. Ninety-nine percent of all tasks, large and small, can be accomplished with these basic tools, whether it’s breaking down a chicken, peeling an apple, or slicing crusty bread. Better still, our favorites are relatively inexpensive. All told, these three knives will run you less than $100 combined and they’ll last for many years to come. We’ve put together a whole list of additional knives that will make certain tasks easier or more pleasurable—I put every knife I own to good use.
