Spring is a joy in the kitchen too. After a long winter, itâs a treat to enjoy fresh, light produce-centric dishes. Here are a few that I plan on cooking in the next few weeks. Annie Petitoâs [Spring Pea Salad]( which includes sugar snap, snow, and English peas (along with radishes, fresh mint, baby arugula, and a lemony dressing) shouts spring. With shades of green and pink, itâs a real looker, too. I have a large rhubarb plant in my garden, and along with chives, itâs the first perennial to pop up in early March.
